Education: AOS Patisserie and Baking at the Western Culinary Institute
The Story: Ana began her career in Penrose Room as an extern working under Pastry Chef Remy Funfrock. Upon the conclusion of her externship she was hired on full time in Penrose Room before she transferred to Summit.

Ana spent two years in Summit working as a Pastry Cook Tournant before finding herself back in Penrose Room as their Pastry Cook Tourant. Overall, she spent six years working under Chef Remy Funfrock making plated desserts before deciding it was time to expand her culinary knowledge. It was then, that she took on one of her biggest passions – chocolate.
Today: Ana’s responsibilities include creating hand-dipped chocolates for Espresso’s, centerpieces for group functions, and chocolate decorations for plated desserts. She makes her chocolates and fillings in the Penrose Pastry Shop (a secret place that we’ll have to reveal to you later). If you’re stopping by, her tiny masterpieces can be purchased (or just drooled over) in Espresso’s!
